Lemon chicken is one of hubby’s favorite but it typically consists of a heavy batter and only small bits of chicken.
I decided to create a healthier version that would satisfy our taste buds without all the extras. I went for something a bit sweet, sour and garlicky.
Simply served with rice – this dish is quick, easy and makes for a delicious dinner.
What you need (serves 2):
2 boneless, skinless chicken breast (cut up into small pieces)
3 tablespoon lemon juice (I used the juice from one whole lemon)
1 teaspoon oil
1 teaspoon minced garlic (you can add more if you like garlic)
2 tablespoon honey
¼ cup of low sodium chicken broth
Cut up chicken breast into small pieces and add salt
Heat up pan, add in oil and stir fry the minced garlic
Add in chicken breast and stir fry until cooked and golden brown
Mix lemon juice, honey and chicken broth then add to pan
Continue to stir fry a few more minutes and serve
